Ginger & Date Bites with Chocolate

What we love about creating energy bites is that they are fully customizable. You can make them different every time by changing the spices, sweetener and granola that you use! These delicious gluten-free and vegan gingerbread bites were created by our friend Marianna More. Her blog, Marianna's Pantry, is filled with nurturing recipes, sweet treats, plants, wellness and balance! 

Here is her recipe for these highly addictive gingerbread energy bites with Classic Granola.

INGREDIENTS:

Makes 14 balls

  • 1 1/2 C pitted medjool dates

  • 1 1/4 C GrandyOats classic granola (you could use any GrandyOats granola here)

  • 1 1/2 tbsp molasses

  • 1/4 tsp sea salt

  • 2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ginger

  • 1/8 tsp clove

  • 1/4 C melted dark chocolate

 

DIRECTIONS:

  1. Add dates to a high speed blender or food processor, pulse on high until they are broken into bits.

  2. Add remaining ingredients and blend on high until a big ball of dough forms.

  3. Form dough into 14 even sized balls and refrigerate for 5 minutes.

  4. While the bites are in the fridge melt chocolate in a saucepan or in the microwave. Remove bites from fridge and drizzle with chocolate and sprinkle with more granola.

  5. Store in the fridge for up to a week
